PUDDING: requires only a a handful of ingredients, and about 2-3 minute prep time. who says healthy has to be hard or takes too long? The consistency of a chia seed pudding is very similar to tapioca — gelatinous, thick, and creamy — and the seeds themselves produce a really great texture. This pudding is great as breakfast, a snack or dessert.
coconut mango chia seed pudding with just 5 ingredients, and absolutely no sweeteners added to this pudding, it still taste surprisingly sweet and takes all but 2 minutes or less to prepare. hint: Use ripe mango for sweetness. Mango Coconut Chia seed ice cream: soak some canned and beveraged coconut milk store-bought or homemade, dried mango, chia seeds and sugar (substitute the 3 tablespoon of sugar with 1 tablespoon stevia, and skip the blossom water), throw the mixture into a blender, poured over ice cream molds and freeze. no ice cream mold? use mini dixie cups sprayed lightly with olive oil spray, tear dixie cups when ready to eat. Dairy-free Berry Mousse: using chia seeds to make mousse? ABSOLUTELY! Chia expands to 10 times its size in liquid, which makes it a great and healthy way to make pudding, smoothies, and yes, mousse! Combine coconut milk (homemade here), berries, chia seeds, vanilla extract, lemon juice and stevia, throw in a blender and blend until smooth. Hello guilty-free pleasure.
